Tomato soup Recipe


Ian loves cooking with all the veg that we're now harvesting (hallelujah!). Yesterday he made a delicious tomato soup, with all the vegetable ingredients taken from the garden:


(serves 6)
large onion, finely chopped
green pepper, chopped
1lb tomatoes, skinned and chopped finely
1 pt chicken stock (boiled from the bones of a roaster)
mint (to taste)
basil (to taste)
parsley (lots)
salt & pepper
half teaspoon brown sugar
pasta or rice

Fry the onions and pepper until softened, add all remaining herbs, vegetables and stock, bring to the boil, then add the pasta or rice, season to taste and simmer for 10 to 15 minutes.

Yum! Ella Mae loved it so much it was the first thing she told me about when I returned from a day out.
