Sorry, no pictures of the soup as we ate it all! However this incredibly easy and delicious recipe was taken from The New Covent Garden Food Co Book of Soups (click link to see inside on Amazon). I picked this book up a couple of weeks ago from Khans Book Shop in Kilkenny who had an end of season sale, as well as a few other bargain cook books, some for just a euro each.
This is a great book for a vegetable lover's/gardener's bookshelf as there are several different ideas on how to use your produce.
I'm also pleased to report that the difficult eater in our family, our lovely 9 year old who 'hates' courgettes and would positively swoon at the smell of a piece of brie, asked for seconds! So here it is.
Serves 6
450g (1lb) sliced courgettes
2 medium potatoes (about 350g (12oz), peeled and chopped
1 onion, finely chopped
1.2 litres (2 pints) vegetable stock
225g (8oz) Somerset Brie, remove end rind and cut into pieces (I used a French Brie from Aldi)
Salt and freshly ground black pepper
Put all the ingredients except the Brie in a large saucepan. Cover, bring to the boil and simmer gently for about 15 minutes until the vegetables are tender. Stir in the cheese until melted. Cool a little, then puree in a liquidiser. Taste for seasoning.
That looks so easy and delicious. We haven't had a single courgette yet though as the fox kept digging the plants up looking for worms. They've only started to take off in the last week or so.

I made lots of batches of this last year Jane until I started to worry about the amount of cheese being consumed! I can't grow courgettes at all outside here but in the tunnel I have about 10 waiting to be picked. Am thinking of trying it this week with Camembert (have some reeking out the fridge right now!).
